Succotash is a Kenyan staple. Affordable and highly nutritious vegan entree.
Cooking and prep time: 20 minutes or less
Apparently succotash was popular in the US during the depression era. Recipe for two frugal vegans:
Tomatoes or Marinara sauce
Corn kernels (we used 2 ears of fresh corn)
1-2 cups of kale
1 can of beans
Ready in 10 minutes:
Caramelize onions in evoo, add corn, beans and tomatoes. Simmer for a few minutes, add kale and cilantro a few minutes before serving.
If I use canned beans I skip the salt since most have sodium already ❤️
